A Mauritian recipe


Tomato Rougail This is a recipe from Mauritius. Tomato rougail sauce can be served with fried fish. First wash, peel, seeded and crushed tomatoes. Grate some ginger. Peel and grate garlic. Peel and slice onions. Wash peppers and cut in lengthwise. Wash parsley and collect the leaves. Heat oil in a large skillet and then brown onions. Add peppers, garlic, ginger, tomato paste, pepper and some thyme. Let it cook for 2 minutes. Add parsley before serving and your sauce is ready. Priscilla, LDKom
